Elderberries are used to make wine, jams, and confections. They are rich in antioxidant oligomeric procyanidins (OPCs). In the late 1980s and 1990s researchers started looking at using extracts of the berries to promote immune function*. Since that time, Elderberries have become a top selling herb in the US and Europe.
